Hi there! I found your post to be really interesting! I'm not sure if I could do a vegan diet either, at least not full time, but I agree that it wouldn't hurt to try some of these recipes! The cheesecake one did sound really amazing..and you can't go wrong with chocolatey deserts right? I was wondering what types of beverages you are having in addition to the water with ginger and lemon and juice. Do you drink any soy milk or teas? My guess is you don't drink coffee, right? That one would be hard for me to say goodbye to. I'm glad you are seeing such great results! Best in health, Michelle
