I think you may have answered your own question. Stress about jobs, money, etc. can certainly be a sex killer. Secondly, having sex once a week is actually a lot in a common relationship which is possibly once a month....consider yourself lucky.
If you are concerned, talk to him. The best answer you can get is from him as to why he may be a little stand-off-ish but try not to blame him for resisting sex. As you said, there are some stresses in his life and this is the number one reason why couples may no longer be intimate.
