For someone who works out 7-8 hours a week, you not only need to stay hydrated but you must consume a lot of calories. Hydration does not give you energy, only calories do. Prior to exercising, you should have eaten something that will give you enough energy to get through the workout. Even when you are not working out, if you aren't consuming enough calories you will feel lightheaded throughout the day or overexerted. You may have too much going on in your life--work, relationship, school, gym, not enough sleep, and other responsibilities that will start to take a toll on you. If you cut down on some of your daily activities and you still feel like these headaches do not go away or are progressively getting worse then please return to your doctor.

Have you seen a nutritionist to help guide you with a gluten-free diet? It could be that since you are limited to the food that you can consume, this may be standing in your way of getting the appropriate nutrition required.
