Vomiting in the absence of illness is a red flag. I think his defensive response is the second clue.
Encourage your son to open up to you. Approach him in a non confrontational manner. Pick a time when you are both alone and will not be disturbed. Put your arm around him and let him know that he is loved unconditionally. Wait for him to speak. Listen and keep your emotions in check. It may take several tries.
Explain that dieting can compromise his nutrition, growth and health.
If you think the football coach is placing unrealistic demands on your son and his health is being compromised, speak up. You have that right and your son's well-being is at risk.
