Hi Carrie Margaret!

Thank you for sharing your question with the EmpowHER community! Fall is one of my favorite times of year and especially Halloween! The minute I see the pumpkins make their debut at the grocery market, I get excited for costume shopping and tasty pumpkin dishes.

There are many healthy benefits to cooking and baking with pumpkins in addition to just flavoring your dishes with the spices. Here are some great fall recipes that an EmpowHER writer has shared with our community.

Pumpkins and their seeds are rich in potassium with a good amount of iron, zinc, and fiber. The bright orange flesh is loaded with beta-carotene, which keeps your immune system strong, benefits vision, helps prevent heart disease, and may defend against cancer. Here is a great recipe for Stuffed Pumpkin-

Carrie Margaret, be sure to let us know if you try out any of these recipes or stumble upon any new variations!

Watch out for ghosts and goblins this fall!!

Best,

Kristin
