I just tried this wonderful salad recipe tonight and it was delicious! I think it will make a great addition to your healhty diet before or during the summer months. It is rich in anti-oxidants too!
Broccoli Sprout and Arugula Salad with Blackberries and Papaya (serves 4)
1/4 cup fresh grapefruit juice
2 tablespoons all-fruit blackberries preserves
2 tablespoon flaxseed oil
1 tablespoon extra-virgin olive oil
4 ounces broccoli sprouts
1 cup cubed papaya
1/2 cup chopped almonds
1 cup fresh or frozen (thawed) blacberries
Preparation
1. In a small bowl, combine grapefruit juice, blackberry preserves, flaxseed oil and olive oil. Whisk together until the well blended and slightly thickened. Season with salt and pepper and set aside
2. In a large bowl, combine broccoli sprouts, arugula, papaya, and almonds; toss with just enough dressing to lightly coat. (Refrigerate remaining dressing for another use)
3. Divide greens among four serving plates. Top with blackberries and serve.

Thank you so much for sharing this delicious salad recipe with us! My mouth is watering just reading the ingredients. I have read and heard so much about flaxseed oil and using it in a salad seems like a great idea. I understand it is helpful for so many health conditions. I'll have to try this salad this week.
