Recipe for Tuscan Kale Salad

Since I work from home, I love to do some quick cooking of what I like to eat (not kids or husband) when I have time. I throw whatever organic veggies I have (tomatoes, onions, summer squash, etc.) in a saute' pan and heat them up with a spray of olive oil. I often throw pine nuts or pumpkin seeds in there too. Then I throw them in a plastic container with pre-washed greens (organic spinach, green leaf or romaine), and add a tiny bit of Craisins, avocado, or apple pieces, and shake the container up with some balsamic vinegar.
If I've accidentally made too much, I leave some in the container for later and refrigerate it.

My favorite summer time salad is baby spinach, strawberries and blueberries with a sweet-and-savory vinaigrette. The vinaigrette only takes a few minutes to make, and includes vegetable oil, white wine vinegar, sugar, poppy seeds, sesame seeds, Worcestershire sauce (no kidding!) and a few other spices. I'll find the recipe and post. I am not a big salad-eater, but I can not get enough of this! The sugar makes it not as healthy, but I have never ate so much spinach until this lovely salad appeared in my life!

I love salad - often as a main course.

I make a killer Caprese salad but also love to make a salad with mixed organic greens (I don't trust non-organic greens), Gorgonzola or blue cheese, onion, tomato, cucumber, walnuts and balsamic vinegar. It's simple but really crispy and fresh, with tons of nutrients. NOM NOM NOM!

A great "non-diet" salad dressing is from Kraft. It's their "Roasted Red Pepper Italian with Parmesan dressing and marinade". Only 2 grams of fat/40 calories per serving with very little sugar. The downside is that's it's a little high (14% of RDA) in salt but a couple of glasses of water with the salad should take care of things! I like it a lot.
