Creating A Healthy Meal from What's in the Freezer

Today my brother dropped by to mow the lawn and since I was home I wanted to provide a little improptu lunch for him and my niece. Whenever I cook for people I always want to make them something that I know they will like to eat. With my brother I always try to make something that has lots of veggies in it. As a little boy my brother will admit he only liked pizza and hotdogs. Now as an adult he has quite a large palate so feeding him veggies is really easy so it is fun to give him new ideas to make at home.

Since I didn’t know he was coming I really was limited to what was in the refrigerator and freezer. I decided on soup and sandwiches. Okay, so I had made a homemade tomato basil soup that I was anxious to have my brother try. But you could use any soup that you have in the pantry. We had some frozen vegetables, sandwich meat and fancy bread. Which led me to a creative and easy sandwich.

I decided to sautée some vegetables in olive oil. What we had in the house was zucchini, summer squash, onions and spinach. Once the vegetables were tender I put them on top of some fancy bread and melted some cheese, creating two open-faced sandwiches. My brother wanted me to add turkey too. It was a great hit. There were at least two servings of cooked vegetables on each side of the open-faced sandwich. We were satisfied and got four servings of vegetables with our lunch. Two servings were from the cup of soup and 2 servings on the vegetables. My niece wanted a treat so I blended a peach shake -- another serving of fruit.

I had the opportunity to have a wonderful lunch with my brother and niece. I whipped up some lunch with what I had in the freezer and created a wonderfully healthy lunch. The whole lunch took only 20 minutes. If you couldn’t come up with this off the top of your head then take some time and planning. You could create the same thing in your home for your family. Eating healthy can be fun, easy and tasty. You just have to think about my mantra: how can I add more vegetables to my meal, and look for recipes that help you do that!
