Ingredients and Preparation

Medium tomatoes, seeded and chopped into 1-inch chunks3
Red onion, diced¼
Fresh basil, coarsely chopped2 tablespoons
Garlic clove, minced1
Capers2 teaspoons
Olive oil1 tablespoon
Balsamic vinegar2 teaspoons
Kosher salt½ teaspoon
Angel hair pasta4 ounces
Grated Parmesan cheese2 tablespoons
  1. Directions
  2. Combine tomatoes, onion, basil, garlic, capers, oil, vinegar, and salt in a large bowl. Let marinate at room temperature for 30 minutes.
  3. Cook pasta according to package directions, omitting fat and salt. Drain pasta, toss with tomato mixture, and top with Parmesan cheese.
