Scallop Kabobs

These colorful skewers contain scallops, which are naturally low in total and saturated fat.

Ingredients and Preparation

IngredientsMeasures
Medium green peppers, cut into 1½-inch squares3  
Fresh bay scallops1½ pounds
Cherry tomatoes1 pint
Dry white wine¼ cup
Vegetable oil¼ cup
Lemon juice3 tablespoons
Dash of garlic powder
Black pepper to taste
  1. Directions
  2. Perboil green peppers for 2 minutes.
  3. Alternately thread first three ingredients on skewers.
  4. Combine next five ingredients.
  5. Brush kabobs with wine/oil/lemon mixture, place on grill (or under broiler).
  6. Grill 15 minutes, turning and basting frequently.
