Deborah Kesten:
When you eat fresh whole food in its natural state as often as possible--meaning fruits and veggies and whole grains and beans and peas, nuts and seeds, and also lean and low-fat dairy, fish, meat, and poultry, instead of processed pepperoni, instead of potato chips, or whatever and white flour or Wonder bread and Twinkies--when you are consuming fresh whole food in its natural state as often as possible, you are taking in the vitamins and minerals in the ratio in which nature meant for you to consume it. And that means that your mind and body are going to get the vitamins and minerals it needs to be relaxed, calm, and I bring that up because one example we just talked about carbohydrate foods, that they can release serotonin, but when you consume, for example, whole grains, they have lots of the B vitamins.

There are 8 B vitamins in the B vitamin family, and four or five of them are linked with combating depression. And so, the implication is when you eat lots of processed food, you are not taking in adequate--because it doesn’t have the whole grain and all the components--and therefore you are not taking in the B vitamins and other vitamins and minerals and the good fats, the essentially fatty acids we hear about all the time.

So there’s a whole dance that goes on with the food that you consume and vitamins and minerals in the food. It’s not a simple matter of just one element of it.
