Deborah Kesten:
Yes, you can get enough fats, vitamins, and minerals with the reversal diet with the exception of vitamin E, which is very hard to get, except in foods such as especially nuts and seeds, which is much too high in fat if you already have diagnosis of heart disease.

So, if you already have a diagnosis of heart disease, that means that, for whatever reason you’re not metabolizing fat in food and cholesterol in food effectively, and so therefore added fat and cholesterol foods, which are from animal-based foods such as dairy, fish, meat, and poultry, are not included in the reversal program.

But we do know that, because I have analyzed hundreds of diet diaries of people following the reversal diet, you can indeed get adequate vitamins and minerals if you do it right, and that means consuming adequate amounts of fruits and veggies and whole grains and also beans and peas every day.
