Deborah Kesten:
Well, I mentioned to you when we started kind of talking about the fat story, as I call it, that all food has fat. That means, all food has varying proportions of saturated hard fat, of polyunsaturated liquid oil that we see in the supermarket all the time, and also monounsaturated fat, which is olive oil. It’s kind of cloudy; it’s not hard and solid like saturated hard fat, and it’s not liquid. It’s kind of cloudy when you put it in the refrigerator, olive oil, for example.

And so, it is, when we talk about fat, not only does all food have fat in it, but all food has varying proportions of saturated and polyunsaturated and monounsaturated fat in it. So it’s just not this easy story. So the question again to ask yourself in terms of fat and the optimal amount that you need is, “What is your health concern and what kinds of fats and what kinds of foods are going to give me the nutrients, including fats, carbohydrates, protein, vitamins, minerals, enzymes, fiber, what kinds of foods are going to give me the nutrients, including fat, the kinds of fat that I need to prevent a health problem, manage a health problem, or reverse an existing health problem?” That’s going to help you think about how much fat to include in your diet and what kind of fat to include in your diet or avoid.
