Ingredients and Preparation

Trout fillet, cut into 6 pieces (any kind of fish can be used)2 pounds
Lime juice3 tablespoons (about 2 limes)
Tomato, chopped1 medium
Onion, chopped½ medium
Cilantro, chopped3 tablespoons
Olive oil½ teaspoon
Black pepper¼ teaspoon
Salt¼ teaspoon
Red pepper (optional)¼ teaspoon
  1. Directions
  2. Preheat oven to 350ºF.
  3. Rinse fish and pat dry. Place in baking dish.
  4. In a separate dish, mix remaining ingredients together and pour over fish.
  5. Bake for 15 to 20 minutes or until fork-tender.
