Yellow bell pepper, diced	½
Red bell pepper, diced (reserve other half for Chicken Tacos recipe)	½
Capers	1 tablespoon
Halibut, cut into 2 filets	¾ pound
Cooking spray
Olive oil	2 teaspoons
Salt	¼ teaspoon
Freshly ground pepper to taste

Directions
Preheat oven to 400°F.
In a medium bowl, combine onion, peppers, and capers. Set aside.
Place fish, skin-side down, on a baking dish coated with cooking spray. Drizzle fish with olive oil, season with salt and pepper, and top with pepper mixture. Bake about 20-25 minutes, until fish is opaque throughout and flakes easily with a fork.
Serve fish topped with pepper mixture.
