I personally have a hard time blinking and blinking. My eyes tear up and my throat feels like I just choked on something I was drinking. I start coughing and I dont really have control of where I look. When it starts I stop making eye-contact with anyone though.

Hello. Thank you for writing.

These symptoms are concerning and should be evaluated by a doctor as there can be many causes.  Among them, a hemifacial spasm which refers to involuntary muscle contraction (spasm) on one side (hemi) of the face.  We have a thread about this here:

A focal onset seizure, also known as a partial seizure, is when a seizure occurs in just one area. A focal onset seizure may occur for many reasons, including epilepsy, infections, heat stroke, or low blood sugar.  We cannot know what might be causing your symptoms, so it's important to talk with your doctor.  Keep us updated.
