Combined research from Tulane University and Harvard School of Public Health found that eating just one daily serving of green leafy vegetables such as spinach, kale and lettuce reduces the risk of developing type 2 diabetes. Other choices include bok choy, cabbage, watercress, mustard greens, turnip greens and collards.
