Low-carb Squash

Do you have a hard time staying away from the mashed potatoes at a holiday table?

Nobody is going to mistake winter squash for a potato, but a nicely prepared baked squash with butter, salt, pepper and parsley can create a warm glow within.

Low-carb meals may be trickier over the holiday season as people yearn for their traditional favorites. But a little creativity and flexibility can go a long way toward laying out a spread of delicious and satisfying dishes.

Meat is often the centerpiece of the low-carb table. Ham and turkey are traditional favorites but any type of meat when cooked right will fill the bill.

By "cooked right," I refer of course to any meat that has been basted with butter or a healthy oil. Olive oil and coconut oil are examples of healthy fats that are not only acceptable, they're practically requirements.

Desserts? We've got desserts. You can buy or make just about any dessert in a low-carb version. Pies, cakes, and sweet confections can be prepared with your favorite artificial sweetener, for instance.

If you are eating low-carb because you have to, there's no reason you can't also absolutely enjoy and revel in it with foods that nourish and taste good too.
