According to new research, it may be possible to prevent the occurence of non-Hodgkin lymphoma by increasing the dietary consumption of Vitamin K. The Mayo Comprehensive Cancer Center in Minnesota reports that the risk of developing non-Hodgkin lymphoma decreases by 45 percent when Vitamin K levels in the diet are high.

Vitamin K may not be familiar to many of us. It is a fat-soluble vitamin that is found most commonly in leaf lettuce and spinach. It can also be found in lesser amounts in asparagus, alfalfa sprouts, bell peppers, onions, as well as in some fruits.

"Well-known as essential for blood clotting (the name of the vitamin is derived from the German word "Koagulations"), vitamin K has also been found in recent years to be important for other functions in the body, including putting a damper on inflammation and regulating cell growth -- and this might explain its apparent ability to protect from non-Hodgkin lymphoma."
