While some of us are enjoying the traditional turkey, the vegetarian will be looking for more than just mashed potatoes and the ubiquitous grean bean casserole. This afternoon, our office held a T-Day potluck lunch. Because we have so many East Indian contractors, some of us made sure we took the vegetarians into consideration when making our dishes.
Having spent several years as a vegetarian (not vegan) while my system was going through some sort of internal battle with life in general, I know what it's like to try to fulfill nutritional requirements on a regimen of nuts, seeds, greens, beans, etc. and the ubiquitous tofu. A couple of T-Days in a row, my kid sis and I experimented with tofurky, and we actually found one at Whole Foods that was pretty good.
People find having to accommodate vegetarians at the table very challenging, but it doesn't need to be. No one has to give up traditions or compromise dietary preferences over the holidays.
