I thought it would be neat to share healthy recipes (or as healthy as they can get) I know that sometimes our healthy options can be limited so feel free to post away. Also, if you can, post the nutritional value for those of us counting carbs or calories :)
Breakfast- Mushroom Omelet (feel free to change to your liking)
6 egg whites
salt/pepper to taste
3/4 mushrooms, sliced
2 tablespoons green onion, chopped
1/2 tomato, chopped
1 1/2 ounces low fat cheddar cheese shredded
In a small bowl, lightly beat egg whiteswith fork and season with salt/pepper to taste
coat a small saute pan with cooking spray and place over medium heat. Add veggies and cook till tender
add egg mix and cook until set on bottom. sprinkle the cheese over top, fold omelet in half, and cook until cheese is melted and eggs are set.

I never make it with 6 egg whites, I use 3-4 egg whites so calories and nutrients may vary depending on how many egg whites you eat.
