Dr. Dae's Cooking Healthy Food Out of Two of Her Favorite Books!

This article will continue to chronicle my experiences cooking during project YUM. We decided that project YUM would last for four weeks and I could cook anything that I wanted to deliver to our friend. By anything I mean plant-based whole food meals because the goal of taking food to our friend's house was to provide healthy food that would strengthen her and her family. I decided to cook recipes from Rebecca Katz's two books: One Bite at a Time and Cancer Fighting Kitchen. She has wonderful recipes that are healthy for everyone. Besides how many people get to cook recipes and have the person who wrote it available for questions and suggestions? I had to take advantage of such a great opportunity. I was really excited to play in Rebecca’s books for four weeks. Since it is fall, I wanted to cook foods that are in season, so I wanted to make sure to have green vegetables, squashes, pumpkins and soup -- lots of soup! For project YUM I was going to cook four to five dishes every three days. This is a big task even for people who love to cook like myself so I knew I would need to plan ahead to be successful. Using Rebecca’s book allowed me to look through the books and pick the recipes for the day and create a grocery list for the store. I have a patient handout that breaks the grocery store into departments and I used it so that as I went through the store I could make a quick sweep and get out as soon as possible. It saved me so much time having my lists ready. Planning is the key to cooking multiple dishes at one time. This is a great hint for anyone deciding to cook several dishes on one day and then pull them out to eat for the rest of the week.

Several people might wonder why I wouldn’t create meals from my book or just create new recipes for my friend. I love the recipes from my book, Daelicious! Recipes for Vibrant Living but I use them all the time when I cook. In order to get my juices flowing for this project I needed inspiration and Rebecca’s book has so many inspiring and delicious recipes. Using her book allowed me to grow as a cook to find out new taste combinations that I would not have thought on my own.
