I am an "explosion" sneezer after eating some chocolates, always with chocolate mints and very quickly with white chocolate.
There are two trigger points that set one sneezing / coughing / tears running and or nose running.
The main ones are those half way up the nostrils. These can become very sore if you are e.g. pollen allegic and very very sensitive. Fortunately there are cheap nasal sprays now that are very effective at reducing the sensitivity.
The second trigger point is at the top back of the throat or roof of the mouth. Whichever you like. It's here that the mint or other food causes the allegy reaction. Once the allergen is recognised by the body from previous occassions the reaction stops but one may feel flushed, uncomfortable in the stomach, a bit blocked in the ears etc. Overall I believe it's an allergy to sugar.
