Over-exercise and extreme weight loss are two key reasons for no longer getting periods.

It's good to be fit and healthy but it sounds like you may be taking it too far. Exercise every other day and allow a little weight gain and see what happens. Becoming vegan may cause some people to lose some weight but a proper vegan diet should not cause a person to drop so many sizes unless you are under 5 feet tall.
