Yes, if you waited 7 days to have sex (starting from the day you began doubling-up on your missed pills), then you should be adequately protected from pregnancy. Please know, there is always a chance of pregnancy when missing pills (nothing is 100%), and since you are late for your period, it would be a good idea to take a home pregnancy test just to rule out the possibility of pregnancy. Having a late period, after an early period, is fine, as your body may be "readjusting" to the fluctuation if hormones from your pills (your body went without synthetic hormones for two days in-a-row, then received two double-doses; this does not cause harm, but may change the date of your period slightly).

One other note: you took your pills correctly as far as doubling-up, but it is important to take that day's pill, and then double-up using one of the missed pills.

For example:
Thursday: missed pill
Friday: missed pill
Saturday: take Saturday's pill as usual, and double-up using Thursday's pill
Sunday: take Sunday's pill as usual, and double-up using Friday's pill
Monday: caught up on pills, back to one per day
