It is wonderful that you are wanting to help your aunt, plus know that your specialty area may not be what is most helpful at this moment in their lives..it is very thoughtful and open-minded!! They will appreciate your flexibility in the future, and I may even come to you for advice when a new diagnosis is not so raw.

The best place for healthy eating information for diabetics is the American Diabetes Association (http://www.diabetes.org/). They provide a wealth of information including recipes, "what can I eat" and more at their ADA Food & Fitness page.

I would also recommend that the entire family talk with a Registered Dietitian who specializes in Type I diabetes in children, as it will not only be the child who's eating habits need to change, but the entire family's as well. They will undoubtedly need some ongoing guidance and support throughout this process; some days will be easier than others.

Please let us know if you need any additional information!
