I think you are on the right path through facing the situation with sincerity and honesty.
At this point in the relationship what she needs from you is respect and patience.
Let her have a break, don't keep pushing for now. She may find that you are actually perfect for her and come back. If she finds satisfaction elsewhere, then I know it would be heartbreaking, but everyone deserves to be with someone who's in 100%.
The best way to show maturity is have an intentional conversation with her about what she can expect from you during the break. Will you see other people too? Will you wait for her? Will you respect the boundaries she puts in place (such as, not contacting her if she does not want you to)? Express your current feelings for her. Also set any boundaries you may have such as: don't call for favors in the middle of the night, for example. That is just a random example, but having boundaries yourself is also very mature.
