Six years ago I would have NEVER considered becoming a vegetarian. In fact, I didn’t even like salads and barely ate any veggies. I told people that lettuce was meant for bunnies and meat was meant for humans. So I always chose big burgers, yummy steak and delicious chicken and loved it. I thought it was our right, as humans to eat what was lower on the food chain.
Four years ago I started seeking out information about diet, nutrition and general health. I started to see a correlation between what you put into your body and how you felt in general. I was tired of feeling drained and blah so I tried fad diets like living off grapefruit for a weekend to see if they helped me feel better. They never did. In fact, I felt worse so I reverted back to my old habits but I knew there had to be another option.
Two years ago I made fun of my vegetarian friends but secretly wondered if they had it right. I even nicknamed people that were vegetarians with types of veggies, like carrot or celery. I thought I was hilarious.
One and a half years ago I started questioning my own beliefs, life style and diet. I was dealing with some annoying health issues and wasn’t feeling “my best”. So I did some research and decided to try “Vegetarian Before Dinner” – a great idea from Mark Bittman where you don’t eat any meat before dinner. Surprisingly it wasn’t that hard for me to “give up” meat during the day. In fact, I was having fun with the experiment, trying new vegetables and new breakfast and lunch options, being more adventurous at restaurants and generally feeling better.
One year ago I read Skinny Bitch and my life was forever changed.
One year ago I realized maybe I wasn’t “right” about everything.
One year ago I took a huge leap and decided to try something new.
One year ago I made a change to better myself and hopefully the world around me.
One year ago I became a Vegetarian.
