Ingredients and Preparation

Solid white tuna in water, drained1 (9-ounce) can
Celery, chopped¼ cup
Scallions, chopped¼ cup
Dried dill weed1 teaspoon
Low-fat mayonnaise¼ cup
Mustard1 teaspoon
Whole grain bread4 slices
Medium tomato, sliced1
Reduced-fat cheddar cheese, shredded½ cup
Freshly ground pepper to taste
  1. Directions
  2. Preheat broiler.
  3. In a small bowl, combine tuna, celery, green onions, dill, mayonnaise, mustard, and pepper.
  4. Place bread slices on a baking sheet and broil 5 inches below the heat for 1-2 minutes, until lightly toasted. Then top each of the four slices with the tuna mixture, add sliced tomatoes, and sprinkle with shredded cheese. Broil 5 inches below heat for 3-5 minutes, until cheese is melted.
