| Lo mein noodles (or whole wheat linguini) | 4 ounces |
| Canola oil | 2 teaspoons |
| Garlic, minced | 2 cloves |
| Boneless lean pork chops, sliced into 1/2” shreds | ½ pound |
| Broccoli flowerets | ½ cup |
| Small red bell pepper, sliced into ¼” strips | 1 |
| Mushrooms, sliced | ½ cup |
| Scallions, sliced | 2 |
| Low-sodium soy sauce | 2 tablespoons |
- Directions
- Cook noodles according to package directions, omitting salt and fat. Drain and set aside.
- Heat oil in a medium skillet or wok over medium-high heat. Add garlic cloves and cook for 1-2 minutes, until garlic is tender. Stir in pork and cook 2-3 minutes, until it begins to brown. Stir in broccoli, pepper, mushrooms, and scallions, and continue cooking for 6-8 minutes, until vegetables are tender and pork is cooked through.
- Turn off heat, add soy sauce, and toss with noodles. Serve immediately.
