You’ve had a killer workout and a hot shower, right on the heels of a good night’s sleep.
You want to take on the day, but you can’t; your breakfast is bringing you down.
It’s the same old thing, day after day. Your breakfast is utilitarian and functional.
It’s like putting on white cotton underpants; it does the job, but it’s just not a lot fun.
All of that is about to change. The recipe below will add spice to your life, infuse you with enthusiasm, and even balance your checkbook. (Well, that might be overstating it. Although, except for the checkbook part there is a shade of truth to it.)
- Here’s what you will need to prepare this spicy, lively, taste bud-tickling treat:

- If you are using actual eggs from actual chickens, separate the yolks from three of them and either discard the yolks or save for another use. If you are using eggs from a carton, measure out the equivalent of 4 eggs.
Make ahead tip for saving time
You can prepare several of these at a time and have them ready to go at a moment’s notice. To prepare ahead of time, wrap each assembled tortilla in microwave-safe plastic wrap and when you need one, just warm it up. (I actually prefer my salsa cold, so if I make these ahead of time, I omit Step 11 and then after I warm it up, I open it and add the salsa.)
Half carb, half protein, with a little bit of fat and a lot of flavor. Put on a black lace thong and enjoy!

This sounds excellent! I absolutely love eggs of all kinds and with the salsa on top, this is right up my alley. Can you touch a bit on the whole cholesterol and egg topic? While I'm a huge fan, in the back of my mind, there's a little voice of hesitation. Thanks for the excellent info.
