As a lover of Italian and Mexican cuisine, the moment I heard the name “avocado pasta” I knew I’d found love. A brief recipe hunt and one bite later, I was right.
Full of good-for-you fats and essential vitamins, avocados are a wonderful addition to every healthy diet. Avocado pasta is a perfect healthy choice for vegans and vegetarians, and it can even be made gluten-free. An unconventional choice for a pasta dish, avocados make a creamy, hearty sauce without any butter or cream.
This simple recipe takes no more than 20 minutes from the fridge to your table. It also serves as a great base for the inspired chef. Feel free to add protein, extra veggies, or nuts and get creative.
However you make it, the resulting dish is filling, hearty, and velvety smooth.
12 ounces pasta of your choice
2 large ripe avocados, pitted, peeled, and diced
Juice of one lime
4 cloves garlic, minced
2 tablespoons olive oil
1/2 cup fresh cilantro, chopped
1/2 cup fresh basil, chopped
Salt and pepper to taste
Cook the pasta per the package instructions. Drain and keep warm.
Place avocado, garlic, limejuice, cilantro, basil into a food processor or blender.
Blend until creamy and smooth.
Add salt and pepper adjusting to taste.
Mix sauce with hot pasta and serve immediately. Best enjoyed same day.
