Eat Breakfast on the Go With Baked Oatmeal!
Who doesn’t love a warm bowl of oatmeal as their go-to breakfast meal? It is fast, energizes you for the rest of the day, and yet still filling without the big calorie numbers. However, life can get super hectic for busy moms and even making a bowl of oatmeal is going to throw you off of your schedule.
Instead, plan ahead with these mini-to-go baked oatmeal bites. They are perfect for calorie-conscious moms during those busy mornings when they are running late but still need something healthier to eat. You can start off your day light with this satisfying, delicious and low-calorie breakfast recipe.
Here are all the ingredients you need:
A. 1/4 cups of canola oil
B. 1 cup of brown sugar, packed
C. Two eggs
D. 1/2 cups of applesauce
E. 1 1/2 cups of milk, skim
F. 2 teaspoons of vanilla extract
G. 1/2 teaspoon of salt
H. 1 tablespoon of ground cinnamon
I. 3 cups of rolled oats
J. 2 tablespoons of baking powder
K. Optional fruits, nuts, or chocolate chips for extra taste
And here is how to make baked oatmeal:
Being by preheating oven to 350F. Line a muffin tin or tray with paper liners (or foil, entirely up to you) and set aside for later.
In a large mixing bowl, mix and whisk together eggs, brown sugar, and oil until the sugar has completely dissolved. Next add in the applesauce, vanilla, milk, cinnamon, and salt and whisk until all well combined. Finally stir in the oats and baking powder.
Take your muffin tin and start filling in each of the cups with about 1/4 cup of the mixture. Once the cups have been filled, you can add in any toppings such as chocolate chips, fruit, or nuts on top and push down with spoon into cups.
Let bake for about 30 to 35 minutes and serve when cool.
