A citrus-cranberry relish adds piquancy to an easy roll-up sandwich. Make your own or look for a prepared jar at the supermarket. Slice and have it ready in the refrigerator for a quick meal.
½ unpeeled orange, seeded and halved
½ unpeeled apple, seeded and halved
1 (8-inch) whole wheat or plain flour tortilla or flatbread such as lavash
2 large slices (about 1½ ounces) roasted turkey breast or rotisserie chicken breast
- 1. In a food processor, pulse the orange until coarsely chopped. Add the apple and pulse until both are finely chopped. Transfer to a bowl and add cranberry sauce, stirring well to combine.
- 2. Spread ¼ cup of the cranberry mixture over tortilla, Layer the turkey on half of the tortilla. Roll up jellyroll style beginning with the meat side. Slice into 2-inch pieces.
Note: Try leftover relish on turkey burgers too.
