Turkey Lettuce Wraps

Ingredients and Preparation
|Canola oil||1 tablespoon|
|Small white onion, chopped||1|
|Lean ground turkey||½ pound|
|Peanut sauce||3 tablespoons|
|Hoisin sauce||1 tablespoon|
|Low-sodium soy sauce||1 tablespoon|
|Red bell pepper, chopped||½|
|Large, crispy lettuce leaves (butter or iceberg work well)||6|
- Heat oil in a large skillet over medium-high heat. Add onion and sauté 2-3 minutes, or until slightly softened. Add turkey and sauté 6-8 minutes, or until cooked through.
- Stir in peanut sauce, hoisin sauce, and soy sauce, and cook for 2-3 minutes.
- Remove from heat and stir in scallions and bell pepper. Season with salt.
- Spoon turkey mixture into lettuce “wraps,” wrap, and enjoy.
