Ingredients and Preparation

Carrots, chopped2
Onions, chopped2
Celery ribs, chopped3
Garlic cloves, minced2
Zucchini, chopped1
Kale, chopped2 cups
Crushed tomatoes1 can (28 ounces)
Barley, dry½ cup
Chickpeas, drained1 can (14 ounces)
Vegetable broth, low sodium1½ cup
Water4½ cups
Parsley1 tablespoon
Thyme½ teaspoon
Oregano1 teaspoon
Ground black pepper1 teaspoon

  2. Combine all ingredients in slow cooker.
  3. Cover and cook on low for 6-8 hours or until vegetables are tender.
