Ingredients and Preparation

Olive oil1 tablespoon
Onion, chopped1½ cups
Garlic cloves, minced2
Low sodium chicken broth1 can (15 ounces)
Great Northern beans, rinsed and drained2 cans (15 ounces each)
Cannellini beans, rinsed and drained1 can (15 ounces)
Lima beans, rinsed and drained2 cans (15 ounces each)
Oregano½ teaspoon
Rosemary½ teaspoon
Basil½ teaspoon
Black pepper¼ teaspoon
Evaporated skim milk1 cup
Fresh parsley, chopped1 tablespoon
  1. Directions
  2. Heat oil in large saucepan. Sauté onion and garlic until onion is translucent.
  3. Add broth, beans, salt, Italian seasoning, basil, and pepper. Bring to a boil.
  4. Simmer on low for 10 minutes.
  5. Pour soup into blender; puree until smooth.
  6. Return to saucepan and stir in evaporated milk. Heat thoroughly, top with fresh parsley
