Ingredients and Preparation

Ground beef, extra lean1 pound
Tomato paste (4 ounces)½ cup
Onion, chopped¼ cup
Green peppers¼ cup
Red peppers¼ cup
Tomatoes, fresh, blanched, chopped1 cup
Mustard, low sodium½ teaspoon
Ground black pepper¼ teaspoon
Hot pepper, chopped½ teaspoon
Garlic, chopped2 cloves
Scallion, chopped2 stalks
Ginger, ground½ teaspoon
Nutmeg, ground1/8 teaspoon
Orange rind, grated1 teaspoon
Thyme, crushed½ teaspoon
Bread crumbs, finely grated¼ cup

Tip: Use extra lean ground beef to lower the fat content in this meat loaf.

  1. Directions
  2. Mix all ingredients together.
  3. Place in 1-pound loaf pan (preferably a pan with a drip rack) and bake covered at 350°F for 50 minutes.
  4. Uncover pan and continue baking for 12 minutes.
