Hi Lia Andrews, You learn something new every day. I haven't tried bitter melon myself ... yet. I actually enjoy bitter foods, but this isn't one I've run across. After doing a little research, I've learned that bitter melon is allegedly high in iron, has twice the beta carotene of broccoli, twice the calcium of spinach, twice the potassium of bananas, and contain Vitamins A, C, B1 to B3, Phosphorus and good dietary fiber. Thanks for this great information. Does anyone else have any other recipes to share?
