Susan and Coach Virginia asked great questions, and while we await your answers, I had a few additional thoughts that helped me with my healthy eating issues. I am also wondering what your "limited food choices" are?

I also have had to "make myself" eat the "healthy" foods, and stay away from the stuff that isn't so great for me. Depending on your diet restrictions that are medically necessary, and balancing those with foods you prefer...I bet there are many foods you can find that are satisfying!

A few "tricks" that I've tried:
1. I treat myself to going to the specialty, organic "whole foods" grocery store twice a month. If you go when it is not crowded, find the produce manager. They LOVE talking about produce...you would not believe! I just walked around, and found some fruits and veggies that I was interested in trying. The produce manager can suggest ways to cook/eat the food. They'll even let you sample it! It makes for a very fun, adventurous outing, especially if you bring a friend. If you dislike all things veggie, start trying some different fruits...there are so many sweet, delicious fruits that I would actually PREFER, rather than dessert, plus they are full of vitamins, minerals and fiber.

2. Make a game of grocery shopping "the perimeter" of the store. Most of the whole, nutritious foods are on the outside of the store: deli, produce, meat, seafood, dairy sections. Try different recipes (I have some suggestions for you, if you tell me what type of cuisine(s) you enjoy most).

3. I "hold the butter (and other fat)" from things that already taste good to me: breads, white potatoes, etc., and save the "fat servings" for things that don't taste as good (to me): green beans cooked with a few pieces of turkey bacon, peas with a pat of butter, sweet potato with a sprinkle of brown sugar, asparagus with garlic and butter, raw cauliflower and broccoli dipped in onion dip made from low-fat sour cream, carrots and cucumbers dipped in hummus...the list goes on!

What foods do you think you should eat more of, and do not like? There are probably alternatives.
