We can't say why you have a tendency to get so stiff and feel so much pain in general but it sounds like your lifestyle is to blame to a great extent.
Walking is excellent for back and leg pain - try to have a brisk walk for at least 30 minutes a day and up to an hour if you can. Continue doing the exercises your doctor advised and increase them.
At work, invest in a standing desk that allows you to work standing up as well as sitting down. These desks can be found in any office supply store or online. It will help tremendously. You can't stop traffic from happening but sit up straight in the car and maintain proper posture.
Your situation is difficult but one that can be helped enormously if you put the time in.
