Yes, it take a lot of dedication, and prep to follow a strictly vegan yet healthy diet. For some folks it is either all or nothing. But I think even supplementing some meals for vegan ones as much as possible has a positive impact on the environment and our well being. Plus it is so fun to create and try new recipes!!!
