I had an ovarian cyst removed a few years ago, its was the size of a grapefruit, but
turned out to be benign. I have been taking minimal Estrogel and Prometrium since I
commenced menopause due to a range of factors, but now I need to know--how much
is the minimum I would need to take to replace the function of my ovaries? I just
want to match, or have slightly more hormones, than I normally would. I also have
stressed adrenals, so can't depend on those organs "taking over" for my ovaries.

This is a question best left for your doctor to answer. Since we don't know what kind of function your ovaries have currently and we aren't familiar with your health history and background, your doctor would be the most adequate person to respond to this. It would be impossible for us to tell you how much estrogel and prometrium you need to reach the function of your ovaries.
I can tell you that in post-menopause normal levels are:
Estrogen: Female (postmenopausal): 0 to 30 pg/mL
Progesterone: Postmenopausal: less than 1 ng/mL
