Hi Christine.

I'm always interested in more information about healthy foods. I grew up doing the chocolate/coffee/soda stimulant/junk food diet. Grabbed a cup of coffee before every class when I was in University. Later became a devoted vegetarian for a few years. Married a carnivore and lived in a small town that never heard of yogurt so the vegetarian thing got modified quite a bit.:)

Raised a bunch of kids so went the peanut butter sandwich, mac and cheese route for a long time.

Started putting on more than the classic middle age spare tire and exhibiting weird neurological symptoms and developing terrible widespread joint and muscle pain. I had read about low carb - anti-Candida diets sometimes working for CFS. Heard about the Atkins Diet explosion 8 yrs ago in the news and it was just the right time for me as I was looking to make changes.

Low carb worked for me. Dropped 40 - 50 lbs, 8 inches around my abdomen, 5 inches around my waist and 4 inches around my hips. This was without exercise (was still too sick to exercise for a long time) and without getting hungry. And many of my worst symptoms decreased, some of them went away. They will come back anytime I stray very far from a low carb high fat diet.

But I'm interested in hearing about more than low carb. Different people do well on different diets. My son is also recovering from CFS and low carb is terrible for him. And each of the other members of my family has different needs than the rest.

Made meal preparation interesting. :) Sometimes the simplest thing was just to make 3 different meals at dinnertime, rather than trying to come up with something everyone would eat.

In the past few years I've gained a great deal of respect for the importance of eating the foods that make you healthiest.
