Finger-licking Curried Chicken

Ingredients and Preparation

Curry powder1½ teaspoons
Thyme, crushed1 teaspoon
Scallion, chopped1 stalk
Hot pepper, chopped1 tablespoon
Black pepper, ground1 teaspoon
Garlic, crushed8 cloves
Ginger, grated1 tablespoon
Salt¾ teaspoon
Chicken, skinless (breast, drumstick)8 pieces
Olive oil1 tablespoon
Water1 cup
Medum white potato, diced1
Large onion, chopped1

Tip: Take the skin off chicken to lower the amount of saturated fat.

  1. Directions
  2. Mix together curry powder, thyme, scallion, hot pepper, cayenne pepper, black pepper, garlic, ginger, onion, and salt.
  3. Sprinkle seasoning mixture on chicken.
  4. Marinate for at least 2 hours in the refrigerator.
  5. Heat oil in skillet over medium flame.
  6. Add chicken and sauté.
  7. Add water and allow chicken to cook over medium flame for 30 minutes.
  8. Add diced potatoes and cook for an additional 30 minutes.
  9. Add onions and cook 15 minutes more or until meat is tender.
