My diet consists of lean meats, vegetables and complex carbs and while I like my diet I need ways to spice up my boring chicken! Anyone have any good spices or recipes to recommend?

Try this:
Remove the skin and bone of chicken thighs.
Dip in flour, then egg wash, and bread crumbs.
Add 3 tablespoons of olive oil to a saute pan.
Brown chicken thighs. Transfer to baking dish. Top each chicken thigh with a slice of mozzarella cheese and a slice of fresh tomato.
Bake in a 350 degree oven for about 20 minutes or until the cheese melts.
