Shelly shares what diet she follows that has most benefited her type 1 diabetes.
I have been a pescatarian. I only eat fish for six years. So, I cut out most fast foods and most processed foods are terrible for diabetics because they go right into your body and turn into sugar like that. So I would definitely say for me, high grain, low, everything has to be whole grain or brown rice or lots of vegetables, lots of fruits. Just foods that are going to get in your body and work the way that they are supposed to and aren’t highly processed because I think that’s a very American thing, and I grew up with it, but since when I was about 20 I changed my eating habits to a much healthier style, and it’s been wonderful for me.
I haven’t struggled with weight problems, which a lot of diabetics do, since then. But I think that if I was eating lots of red meats and lots of processed foods that then I would struggle with that and there’s a lot of consequences that come with that.
