Dr. Blackstone:

A gastric bypass procedure is a procedure in which another small pouch of the stomach is created, but staples are used to divide that pouch from the larger part of the stomach, so there’s no longer any connection between the two. Then a piece of intestine is brought up through the abdomen, from the lower abdomen, and hooked up to that new pouch so that when you eat, you have a very small amount of food that you can eat and the food goes directly into the small intestine bypassing the larger part of the stomach and the duodenum, which is the first part of the small intestine, into the jejunum.

So the food in a sense bypasses about a 100 centimeters (cm) of the digestive tract before the digestive juice mixes in with the food.
